Would AC power = VxIxSin Φ be more accurate than Cosine Φ ?
Er, so when V & I are in phase - i.e. phase angle between them is zero, while cos zero = 1, sine zero = zero - suggesting zero power factor (instead of 1) and so no power at all?

Exactly so Andy. If the winding of a synchronous generator were in phase then only Var's would be produced as you need to cut the magnetic field at right angles.
